Camping is for Everyone...I SWEARS

Camping season started 2 months ago here in Georgia. But we have yet to go.

BOO HOO!

To get me in the spirit, I read this article to remind myself of everything I would need - and that I already have in my house.

We have the tent, fly, tarp, bungee cords, air mattresses, sleeping bags, pillows, fan (essential in GA), camp stove & fuel, cooking pots & pans, plates & utensils, water jug, fire starter sticks, marshmallow roasters, pie-irons, camp chairs, an easy-up, a state park pass...seriously, what more could we need?...

...I know! The article said some of the campgrounds they go to have really pebbly / rocky campsites which HURT your FEET (Black Rock Mountain State Park, I'm talking to YOU). So they suggested buying toy-store large foam puzzle pieces that go in a child's playroom to put on the bottom of your tent.

GEN-IUS! Next stop, Target!

Out of Order apologies, and a Breakfast Recipe

Here are my pending posts which I haven't done yet:

But I just couldn't WAIT to share my newest breakfast recipe, so you are getting out-of-order posts this week (sorry). (You wouldn't really expect any better, right?)

Tex-Mex Breakfast Wrap - 6 Points Plus, about 10-15 minutes cooking time
(note: photo not ACTUAL photo of my breakfast) (but it's close)

Ingredients (for 2 servings)
2 La Banderita Taco Shells (whole wheat if you can stand it)
1 tsp Bertolli Olive Oil
1 cup Egg Beaters (or store-brand "liquid eggs")
1 tsp cumin
1/2 tsp chili powder
1/4 cup skim milk
1/2 cup medium CHUNKY PACE SALSA (do NOT use non-chunky, or, you can use non-chunky but then you have to cut up fresh green peppers and tomatoes and that's too much work for me, personally...as you all know)
1/4 cup diced ham (yes I bought it already diced)
1/4 cup Kraft Reduced Fat Mexican 4-cheese blend

Heat up olive oil. Dump in egg beaters and spices, then milk, and stir. Add salsa, ham, and cheese. Continue scrambling till eggs are firm and salsa is absorbed.

Place it all in a taco shell, add lettuce and taco sauce if you like and EAT UP!

I added an orange and coffee to my breakfast this morning...YUMMMMMM...

Happy Easter everyone! Actually, Happy Easter Monday!

Hopefully everyone got their fill of chocolate bunnies and jelly beans this weekend.

The Kienows had a different take on Easter this year.

After Mom & Dad arrived on Thursday, and Amy on Friday, we decided to be local tourists - we ran errands on my day off (not that exciting, I know), we went to Atlanta Motor Speedway for a track tour, went out to some of our favorite restaurants around our house, cooked up a few delicious dinners, and then headed up to the Smoky Mountains.

We spent Saturday sightseeing in Dahlonega, touring wineries through the mountains, drinking (a bit), and laughing at our own crazy selves.

After checking in to the Amicalola State Park Lodge for the night, we awoke the next morning for an Easter breakfast overlooking the mountains, and then to a 749-ft waterfall - Amicalola Falls is one of the most spectacular sights I have ever seen. Mom even walked the 0.3 mile (one-way) stretch to get the best vantage point of the falls - but it was so worth it!

We enjoyed the rest of the day driving back to our house, and then spending time on the deck and listening to the birds.

So, although we did not have any Easter eggs this year nor the traditional Easter ham...it was one of my most favorite holidays in memory!
